Grilled Oklahoma Onion Burger

Sometimes you don't need much to make a great burger. Cheese, onions and beef smashed together on a griddle are all you need to make your taste buds happy and your neighbors envious.

1 Pound ground beef, 80% lean
1 Teaspoon salt
1/2 Teaspoon black pepper
2 Whole white onion
4 Slices cheddar cheese
4 Whole burger buns

    In a medium bowl combine ground beef, salt and black pepper and mix with hands to combine. Form into 4 1/4 pound balls.

    When ready to cook, start the Traeger grill on Smoke. Place a cast iron griddle on the grill grate and set the temperature to high and preheat, lid closed for 10 to 15 minutes.

    Wipe the griddle with olive oil. Place the burger balls on the grate and immediately smash them down with a spatula until completely flattened. Pile ¼ of the onions on top of each patty and press again embedding the onions into the patty. Cook until burgers are well browned.

    Carefully flip the burger onion stack and cook until onions begin to soften. Add cheese and top with top bun. Place bottom bun upside-down over top bun to allow it to steam in the onion vapors.

    When buns are soft, transfer bottom buns to a plate. Add condiments if desired. Lift up onions, burger, and top bun together and transfer to bottom bun. Repeat with second burgers. Serve immediately. Enjoy!
