Marry-Me-Chicken_Hero

By now you may well know the story behind Marry Me Chicken. Years ago, when Lindsay Funston, a self-proclaimed food-obsessed content director, filmed this creamy chicken dish, her producer tasted it and proclaimed: “I’d marry you for that chicken!” The Tuscan-inspired dish, rechristened Marry Me Chicken, went viral. Our version adds additional layers of flavor thanks to a quick brine that keeps the chicken extra juicy and, of course, wood-fired flavor courtesy of a half hour smoke on the Traeger. Serve the chicken with something to mop up the sauce—rice, pasta, or even just some good crusty bread.

In traditional Korean bossam, boiled pork gets spiced, sliced, and served wrapped in lettuce with an array of condiments. In Chef David Chang's take called Bo Ssäm on which this recipe is based, the pork is roasted. In our version, marinated pork butt gets slow smoked and then braised until it’s fall-apart tender for Korean style pulled pork. You may need to head to an Asian market or look online for some of the ingredients in the Korean style BBQ sauce, but any extra effort will pay off in amazing flavor.

These black eyed peas are simmered with thick-cut bacon, aromatic fresh herbs, and the perfect amount of garlic. A Southern staple on New Year's Day, the dish is purported to bring good luck. Even if it doesn't, it's delicious served up with collard greens and corn bread. (And, when mixed with cooked rice is known as Hoppin' John.) If you have the time, you can smoke pork belly on the Traeger to make your own slab bacon. Otherwise, look for slab bacon at the market near the sliced bacon. Soaking the beans for at least a few hours (and up to 12 hours) makes them cook more quickly.
