Momias (Bacon-Wrapped Meat and Cheese Tortillas)

Fernando Carrillo loves this adaptable snack, which is popular in Northern Mexico. The name comes from the Spanish for mummy, which makes sense as meat and cheese get double wrapped, first in a flour tortilla and then in bacon. Then it’s cooked on a grill or griddle until the bacon is crisp and the cheese melty. In Mexico, there's often a hot dog inside, but Fernando prefers using leftover Traeger-made pulled pork or brisket in his.

6 6-inch flour tortillas
3 Cup shredded cooked brisket, pulled pork, or other favorite meat
2 Cup shredded cheese, preferably Oaxaca cheese
12 bacon slices (not thick cut)
Salsa or other favorite sauce

    You can cook the momias on a griddle or directly on your Traeger. For a griddle, heat a flat top grill to medium heat or place a cast-iron griddle on your Traeger and heat it for about 15 minutes at 400°F. If not using a griddle, simply heat your Traeger to 400°F.

    Place the tortillas down on a clean work surface. Divide the meat among the tortillas, about 1/3 cup per tortilla. Top with the cheese, using a heaping ¼ cup per tortilla. Roll the tortillas up like a burrito, folding the sides in and then rolling it up tightly around the filling.

    Wrap 2 pieces of bacon around the tortilla in a spiral to cover almost completely.

    If using a griddle, place the momias on the hot surface and cook, turning them every few minutes to cook on all sides, until the bacon is crisped to your liking, 10 to 15 minutes. If cooking without a griddle, place the momias directly on the grill grates and cook with the lid closed and without turning the momias until the bacon is crisped to your liking, 15 to 20 minutes (begin checking early).
