Roasted Sloppy Joe Stuffed Peppers

Load your peppers with some hearty flavor. Homemade Sloppy Joe filling loaded into bell peppers, baked over cherry wood and topped with melted cheese. The sloppier the better with this recipe.

2 Tablespoonextra-virgin olive oil
1 yellow onion, chopped
1 Tablespoontomato paste
3 Clovegarlic, minced
1 Poundground beef
To Tastesalt and pepper
1 Cuptomato sauce
1/3 Cupketchup
1 TablespoonWorcestershire sauce
1 Tablespoonapple cider vinegar
1 Tablespoonbrown sugar
4 Bell Peppers, Halved (lengthwise)
1 CupMonterey Jack Cheese, shredded

  • Step 1

    When ready to cook, set the Traeger to 350℉ and preheat, lid closed for 15 minutes.

    350 ˚F / 177 ˚C

  • Step 2

    Heat oil in a large skillet over medium heat. Cook onion until translucent. Stir in tomato paste and garlic and cook until fragrant. Add ground beef, season with salt and pepper and brown.

    Ingredients
    • 2 Tablespoon extra-virgin olive oil

    • 1  yellow onion, chopped

    • 1 Tablespoon tomato paste

    • 3 Clove garlic, minced

    • 1 Pound ground beef

    • To Taste salt and pepper

  • Step 3

    Reduce heat to low and stir in tomato sauce, ketchup, Worcestershire sauce, apple cider vinegar and brown sugar. Let simmer until slightly thickened.

    Ingredients
    • 1 Cup tomato sauce

    • 1/3 Cup ketchup

    • 1 Tablespoon Worcestershire sauce

    • 1 Tablespoon apple cider vinegar

    • 1 Tablespoon brown sugar

  • Step 4

    Divide the mixture evenly into 8 pepper halves and top with cheese.

    Ingredients
    • 4  Bell Peppers, Halved (lengthwise)

    • 1 Cup Monterey Jack Cheese, shredded

  • Step 5

    Arrange peppers directly on grill grate and roast until peppers are tender, about 45 minutes.

    Garnish with green onions and serve immediately. Enjoy!
