This isn’t your typical broccoli casserole—it’s even better. Our cheesy broccoli casserole is made with gooey cheddar, tender broccoli, and a crispy potato chip topping, then baked to melty perfection on the Traeger. Try this au-gratin-style dish for dinner, and it’ll be a guaranteed show-stopper.

3/4 Cup | half-and-half |
1 1/2 Teaspoon | seasoned salt |
1/2 Teaspoon | garlic powder |
1/2 Teaspoon | onion powder |

1/2 Teaspoon | freshly ground black pepper |
4 Ounce | cream cheese, room temperature |
3 Cup | shredded cheddar cheese, divided |
2 Ounce | ridged potato chips (about 1 heaping cup) |

Step 1
Lightly spray a 9x13-inch baking dish with cooking spray. When ready to cook, set the Traeger temperature to 350˚ F and preheat with the lid closed for 15 minutes.

Fill a large bowl with ice and cold water. Boil or steam the broccoli until tender-crisp, about 2 minutes. Once the broccoli is done boiling, immediately transfer it to the ice bath to stop the cooking process, then transfer to a paper towel lined large plate or baking sheet to soak up the excess moisture.

Melt the butter in a large saucepan over medium heat. Add the onions and cook, stirring occasionally, until softened, 3 to 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the flour and cook while whisking for 1 to 2 minutes. Add the milk, half & half, seasoned salt, garlic powder, onion powder, paprika, and pepper and whisk well to combine. Cook, stirring and scraping the bottom of the pan occasionally, until the mixture starts to thicken, about 3 minutes.

Remove the pan from the heat. Add the cream cheese and 2 cups of the cheddar and stir until combined and melted.

Pour the cheese mixture over the broccoli. Add the beaten egg and fold together gently, careful not to break up the broccoli. Transfer the mixture to the prepared pan and top with the remaining 1 cup cheese. Crush the potato chips over the top, scattering them evenly.
