Prosciutto-wrapped Chicken Breasts

Chicken breasts are a weeknight protein staple that can get boring quickly, but not with these prosciutto-wrapped beauties. With four simple ingredients, this dinner comes together in a flash. Traeger Anything Rub is a perfectly balanced mix of salt, pepper, garlic, and a hint of lime that adds plenty of zesty flavor, while the orange marmalade adds sweetness and moisture.

4 (6-7 ounce) boneless, skinless chicken breasts
3 Ounce prosciutto (8 slices)
To Taste Traeger Anything Rub
3/4 Cup orange marmalade

    When ready to cook, set the Traeger temperature to 375°F and preheat with the lid closed for 15 minutes.

    Season the chicken breasts with Traeger Anything Rub, then wrap 2 slices of prosciutto around each breast, using toothpicks to secure. Season with more Anything Rub.

    Insert the probe into the thickest part of a chicken breast. Place the chicken directly on the lowest grill grate, close the lid, and cook until the internal temperature reaches 110°F, 12-16 minutes.

    Meanwhile, add the orange marmalade to a small microwave-safe bowl and microwave for 30 seconds, stirring halfway, until warmed through.

    Flip the chicken breasts, then brush the orange marmalade over the tops. Close the Traeger lid and continue cooking until the internal temperature of the chicken reaches 155°F, 12-15 minutes. Flip again and brush the other side with marmalade. Close the lid and cook until the internal temperature reaches 165°F, about 5 minutes more.

    Remove the chicken breasts from the grill and let rest for 10 minute before serving. Enjoy!
