Smoked Elk Steaks with Caramelized Onions

If you’ve followed the bugle of a bull and brought home an 8 point elk, it’s only natural to infuse it with primal, wood-fired smoke. These elk steaks taste more delicious than your favorite cut at the best steak house.

1 Cupred wine
3 Sprigfresh rosemary
1/4 Cupextra-virgin olive oil
1/2 Cuponion, chopped
3 Clovegarlic, crushed
1 Teaspoonsalt
1/2 Teaspoonfreshly ground black pepper
1 WholeElk Steak, per person

6 Tablespoonbutter, melted
2 Teaspoonsugar

Step

  • Step 1

    In a small bowl, combine the wine, rosemary, olive oil, onion, garlic, salt, and pepper.

    Ingredients
    • 1 Cup red wine

    • 3 Sprig fresh rosemary

    • 1/4 Cup extra-virgin olive oil

    • 1/2 Cup onion, chopped

    • 3 Clove garlic, crushed

    • 1 Teaspoon salt

    • 1/2 Teaspoon freshly ground black pepper

  • Step 2

    Place the steaks and the marinade in a large resealable bag for several hours or overnight.

    • 1 Whole Elk Steak, per person

  • Step 3

    For the caramelized onions, slice the onions in half lengthwise through the stem. Lay each onion half flat on a cutting board and cut into 1/4” slices.

    Transfer to a heat proof pot. Pour the butter over the onions and season with sugar, salt, and pepper. Stir well with a wooden spoon.

    • 2 Teaspoon sugar

    • 1 As Needed salt and pepper

  • Step 5

    When ready to cook the onions, set the Traeger to 300℉ and preheat, lid closed for 15 minutes.

  • Step 6

    Place the pot on the grill grate and cook the onions for 2 to 2-1/2 hours, stirring every 30 minutes, until they are very tender and golden brown. Flavor with a restrained pour of balsamic vinegar. Let cool and store in a covered container in the refrigerator.

    Remove the steaks from marinade. Lightly season steaks with Prime Rib Rub.

    When ready to cook, set grill temperature to 180℉ and preheat, lid closed for 15 minutes.

  • Step 9

    Place steaks on grill and smoke for 25 to 30 minutes.

    Super Smoke

  • Step 10

    Remove steaks from grill and increase temperature to 375℉; allow 10 minutes for grill to come to temperature. Place steaks on grill and cook for 25 to 30 minutes for medium well. Top with warmed caramelized onions. Enjoy!
