Here’s the Traeger take on a popular internet recipe. Seasoned ground beef is cooked on a rack positioned above a pot of chili for optimum smoke penetration. As the meat cooks, it drips fat and flavor into the pot below. Once done cooking, the wood-fired meat gets crumbled into the chili. It’s truly a fun way to make an old favorite.

Tangy with a little heat, this tender pork can be served in chunks on its own, with rice and beans or shredded for pulled pork. It’s especially good as a taco filling white onion, diced pineapple, cilantro, and a little cotija cheese, if you like. Once those ingredients are procured (check an Asian market if your supermarket doesn’t carry them), the sauce takes less than 30 minutes to make. (That said, you can save some time by substituting a good quality store-bought Korean barbecue sauce instead.) Serve the caramelized and sticky bites on their own as an appetizer, in tacos, on pizza, or in lettuce leaves with warm rice and kimchi for a fun make-your-own-wrap meal.

Marinated in such classic ingredients as soy sauce, hoisin, and aromatic five-spice powder, this pork belly cooks low and slow on the Traeger before getting seared on the flat top. The result is meltingly tender meat plus a crisped exterior with the sweet salty flavour of the classic Cantonese roast pork. You can slice the meat and serve it with rice and bok choy as shown here, or dice it to use in stir fry or noodle dishes or fried rice, or stuff it in bao buns.
