    When ready to cook, set Traeger temperature to 165°F and preheat lid closed, for 15 minutes.

    Place half-size pan in center of full-size pan. Surround half-size pan with ice filled all the way to the top.

    Place cheese in half-size pan sitting on top of toothpicks or a cooling rack so it allows airflow around the cheese and prevents sticking. Place pan on grill.

    Smoke cheese for 1 hour. Open grill and flip cheese over. Add more ice around pan into melted water and continue smoking for 1 more hour.

    Remove cheese from grill and wrap in parchment paper. Place in fridge and allow to rest for 2 to 3 days. This will allow the smoke flavor to mellow.

    After 2 to 3 days, remove from fridge, unwrap, slice and serve with your favorite cracker, pickled vegetables and wine. Enjoy!
