Grilled Country Ham Biscuit Sandwich

Wake up to this smokin’ breakfast sandwich. Homemade buttermilk biscuits are baked on the Traeger then stacked high with grilled country ham, eggs, and melty swiss cheese.

3 Cup flour
5 Teaspoon baking soda
1 Teaspoon salt
1 1/2 Stick butter
1 Cup buttermilk
1 egg, for egg wash
6 Slices Country Ham, Sliced
6 Slices Swiss cheese

    When ready to cook, set grill temperature to High and preheat, lid closed for 15 minutes.

    Whisk together flour, baking powder, salt, and baking soda. Cut in butter using two knives (or pulse in a food processor) until butter pieces are the size of peas. And buttermilk and mix until just combined. Dump biscuit dough onto a lightly floured surface and roll out to 1-1/2” thickness.

    Using a biscuit cutter, cut out biscuit shapes and place on a parchment-lined baking sheet. Brush the tops of biscuits with egg wash and place baking sheet directly on the grill grate. Bake until tops are golden brown, 10-15 minutes.

    Place country ham directly on the grill grate next to biscuits and grill until lightly browned and slightly crisp. Top each with a slice of cheese and cook until cheese is melted. Remove from grill and keep warm.

    In a medium nonstick pan, cook eggs to desired doneness.

    To build the sandwiches slice biscuits in half, place a slice of ham and cheese on bottom half, top with egg, then top with the other half of biscuit. Enjoy!
