If you’ve got to eat your vegetables, these fancy-looking carrots taste smokin’ delicious. They're easy to make & are perfect for a holiday side dish or any night of the week.

|3 Tablespoon||high-quality olive oil|
|1 1/4 Teaspoon||Jacobsen Salt Co. Pure Kosher Sea Salt|
|1/2 Teaspoon||freshly ground black pepper|
|2 Tablespoon||minced parsley|
When ready to cook, set Traeger temperature to 425°F and preheat, lid closed for 15 minutes.
500 ˚F / 260 ˚C
If the carrots are thick, cut them in half lengthwise; if not, leave whole. Toss them in a bowl with the olive oil, salt and pepper.

1/2 Teaspoon freshly ground black pepper
Transfer to a sheet pan, spreading into a single layer and roast on the Traeger for 20 minutes until browned and tender.
425 ˚F / 218 ˚C
Toss the carrots with minced parsley. Season to taste, and serve. Enjoy!
