Grilled Zucchini Squash Spears

Elevate your veggie game with this grilled zucchini squash recipe. Cut the zucchini into spears, coat with an olive oil, sherry vinegar and thyme dressing and let our smoke and heat do the rest.

4 Medium zucchini
2 Tablespoon olive oil
1 Tablespoon sherry vinegar
2 thyme, leaves pulled
To Taste salt and pepper

Step

    Clean the zucchini and cut the ends off. Cut each in half lengthwise, then each half into thirds.

    Combine remaining ingredients in a medium Ziplock bag and add the spears. Toss and mix well to coat the zucchini.

    When ready to cook, set the temperature to 350˚F and preheat, lid closed for 15 minutes.

    Remove the spears from the bag and place directly on the grill grate cut side down.

    Cook for 3-4 minutes per side, until grill marks appear and zucchini is tender.

    Remove from grill and finish with more thyme leaves if desired. Enjoy!
