Traditional gremolata is a mix of parsley, garlic, and lemon zest created to accompany rich braised meats such as osso buco. This version includes orange as well as lemon plus flavorful liquids like olive oil, vinegar, and citrus juice to make it more of a sauce. Spooned over steak, this citrus gremolata adds a bright punch, but it’s also delicious with grilled chicken or fish or as a topping for rice or pasta.

1 Medium | shallot, minced |
1 1/2 Teaspoon | finely grated lemon zest |
2 Tablespoon | fresh lemon juice |
1 1/2 Teaspoon | finely grated orange zest |
2 Tablespoon | fresh orange juice |
1 Tablespoon | honey |
1 Tablespoon | sherry vinegar |
1/4 Cup | extra-virgin olive oil |
Kosher salt and freshly ground black pepper |

Combine all ingredients in a bowl. If not using right away, cover and refrigerate for up to one week. Let come to room temperature before using.
