4 Wholeboneless, skinless chicken thighs
To Tastesalt and pepper
8 WholeCorn Tostada
To TasteRefried beans
As Neededlettuce
As Neededgreen onion, coarsely chopped
As Neededcilantro, chopped

Steps

  • Step 1

    When ready to cook, set the temperature to 350 degrees F and preheat, lid closed, for 10 minutes.

  • Step 2

    While grill heats, trim excess fat and skin from chicken thighs.

    Ingredients
    • 4 Whole boneless, skinless chicken thighs

  • Step 3

    Season with a light layer of salt and pepper.

  • Step 4

    Place chicken thighs on the grill grate and cook for 35 minutes.

  • Step 5

    Check internal temperature; chicken is done when a thermometer inserted reads 175 degrees F. Remove from the grill and let rest for 10 minutes before shredding.

  • Step 6

    Place tostadas on grill while chicken is resting for 5 minutes.

    • 8 Whole Corn Tostada

  • Step 7

    Build tostadas starting with refried beans, sliced lettuce, shredded chicken, tomatoes, green onions, cilantro, guacamole. Enjoy!
