Blow your taste buds away with this wood-fired take on grilled cabbage. Cabbage Steaks are grilled over cherry wood and drizzled with a melt-in-your mouth bacon vinaigrette.

- thick-cut lean bacon, cut into 1/4 inch strips
- 1 Large
- shallot, minced
- 2 Tablespoon
- sherry vinegar
- 1 Tablespoon
- whole grain mustard
- 1 Teaspoon
- chopped thyme
- 2 Tablespoon
- olive oil, plus more as needed
- 1
- head green cabbage, cut into 3/4 inch thick slices (about 6 steaks)

Step 1
When ready to cook, set Traeger temperature to 450°F and preheat, lid closed for 15 minutes.

For the Vinaigrette: In a large skillet, cook the bacon in 2 tablespoons olive oil over medium-high heat until browned and crisp. Remove bacon from heat and stir in the shallot, vinegar, mustard and thyme then set aside.

1 Tablespoon whole grain mustard
1 Teaspoon chopped thyme
2 Tablespoon olive oil, plus more as needed
Step 3
Brush cabbage steaks with olive oil and season with salt and pepper. Place cabbage steaks directly on grill grate and grill for 5 minutes per side.
