Steps

  • Step 1

Preheat the Traeger grill to 450°F; this will take about 15 minutes.

    450 ˚F / 232 ˚C

  • Step 2

Toss the halved Brussels sprouts with olive oil, salt, and pepper. Line a baking sheet with aluminum foil and arrange the sprouts cut side down in an even layer. If the Brussel's look too crowded, add a second baking sheet.

    Ingredients
    • 2 Pound Brussels sprouts, trimmed and halved

    • 2 Tablespoon olive oil

    • To Taste kosher salt

    • To Taste freshly ground black pepper

  • Step 3

Place the baking sheets on the bottom grill grate. Close the lid and cook for 5 minutes.

  • Step 4

Arrange the bacon on the top grill grate so that the rendering fat drips onto the Brussels sprouts below. Close the lid and cook for 10 minutes, then flip the bacon and rotate the baking sheets. Continue cooking for another 5 minutes, or until the bacon is crispy and lightly smoked.

    Ingredients
    • 6 Strips thick-cut bacon

  • Step 5

Make the hot honey glaze while the Brussels sprouts and bacon cook. In a small saucepan over medium heat, add the butter, ginger, and garlic. Cook until the butter is melted and the mixture is fragrant, about 1–2 minutes. Add the hot honey and vinegar, stirring well to combine. Bring to a simmer for 2–3 minutes, then remove from the heat.

    Ingredients
    • 2 Tablespoon butter

    • 1 Tablespoon fresh ginger, minced

    • 3 Clove garlic, minced

    • 1/4 Cup hot honey

    • 1 Teaspoon apple cider vinegar, apple cider or apple juice

  • Step 6

Transfer the cooked bacon to a paper towel–lined cutting board to absorb any excess fat. Coarsely chop the bacon and return it to the baking sheets with the Brussels sprouts. Drizzle the glaze evenly over the top, close the lid, and cook for 5 minutes more, or until the glaze is set and caramelized.

Remove the Brussels sprouts and bacon from the grill. Toss everything together on the tray, then transfer to a serving dish. Finish with a drizzle of hot honey and a sprinkle of flaky salt. Serve warm and enjoy!
