When ready to cook, set the Traeger temperature to 250℉ and preheat with the lid closed for 15 minutes.

Rub the brisket with the Traeger Prime Rib Rub and coffee grounds.
1 (12-14 lb) whole packer brisket, trimmed
1/4 Cup Traeger Prime Rib Rub
2 Tablespoon coffee grounds

Insert the probe into the thickest part of the brisket. Place the brisket directly on the grill grates, fat-side down. Close the lid and smoke until the internal temperature reaches 160℉, 4-5 hours.

Remove the brisket from the grill and wrap it in a double layer of aluminum foil. Return to the grill and re-insert the probe. Close the lid and cook until the internal temperature reaches 204℉, 2 1/2-3 hours more.

Remove the brisket from the grill, unwrap, and let rest for 15 minutes. Slice against the grain and serve. Enjoy!
