Smoked Longhorn Cowboy Tri-Tip




Matthew Holopirek submitted this recipe for our Meat Madness competition. The coffee grounds give this Tri-Tip a powerful bark to seal in natural juices, for a superbly flavorful main dish.

  • 1 (2-3 lb) tri-tip

  • 1/8 Cup coffee grounds

  • 1/4 Cup Traeger Beef Rub

    When ready to cook, set Traeger temperature to 180℉ and preheat, lid closed for 15 minutes.

    Rub tri-tip with Traeger Beef Rub and coffee grounds. Place on the grill grate and smoke at 180℉ for 3 hours.

    • 1 (2-3 lb) tri-tip

    • 1/8 Cup coffee grounds

    • 1/4 Cup Traeger Beef Rub

    Remove tri-tip and increase the grill temperature to 275℉.

    Double wrap the tri-tip in foil, return to grill and let cook for 45 to 90 minutes, or until the internal temperature reaches 130℉ to 135℉.

    Remove from the grill, unwrap foil and let it rest for 10 minutes before slicing. Enjoy!
