We’re taking one of Brazil’s favorite cuts of beef – picanha and letting the wood-fired flavor of your Traeger do all the heavy lifting. Just season this juicy steak with salt and serve it like the gaúchos do in Brazil.

1 Pound (2-1/2 lb) wagyu picanha
As Needed coarse kosher salt

Steps

    Cut the picanha into steaks about 1 inch thick. Fold them in half to form a "C" shape with the fat cap on the outer edge.

    Thread the steaks onto a skewer, one on top of the other. Season generously with coarse salt and leave at room temperature while the grill heats up.

    When ready to cook, set Traeger temperature 450°F and preheat with the lid closed for 15 minutes.

    Place the skewered steaks directly on the grill grate and cook for 5 to 7 minutes per side or until desired internal temperature is reached, 130℉ for medium-rare.
