An aromatic infusion of hibiscus flowers combines with a smoked simple syrup to create this unique wood-fired sparkler.

Step 1
When ready to cook, set Traeger temperature to 180℉ and preheat, lid closed for 15 minutes.

Place water in a shallow baking dish and place directly on the grill grate. Smoke the water for 30 minutes or until desired smoke flavor is achieved.

1/2 Cup water
Step 3
Pour water into a small saucepan and add sugar and hibiscus flowers. Bring to a simmer over medium heat and cook until sugar is dissolved.

2 Tablespoon dried hibiscus flowers

Strain out the hibiscus flowers and transfer your simple syrup to a small container and refrigerate until chilled.
Step 5
Pour 1/2 ounce smoked hibiscus simple syrup in the bottom of a champagne glass and top with sparkling wine.
