Step 1
When ready to cook, set the Traeger temperature to 225°F and preheat with the lid closed for 15 minutes.

Step 2
Rub the brisket with the Traeger Prime Rib Rub and coffee grounds.
Ingredients
1 (12-14 lb) whole packer brisket, trimmed
1/4 Cup Traeger Prime Rib Rub
2 Tablespoon ground coffee
Step 3
Insert the probe into the thickest part of the brisket. Place the brisket directly on the grill grates, fat-side down. Close the lid and smoke until the internal temperature reaches 160°F, about 5 hours.

Step 4
Remove the brisket from the grill and wrap it in a double layer of aluminum foil. Return to the grill and re-insert the probe. Close the lid and cook until the internal temperature reaches 204°F, another 2 1/2 to 3 hours. The time will vary depending on the weather, your grill, and the size of your brisket.

Remove the brisket from the grill, unwrap, and let rest for 15 minutes. Slice against the grain and serve. Enjoy!
