Remove the fruit from the grill and cut the rind off the watermelon. Cut the watermelon into 1-inch pieces and transfer to a blender.
Puree until smooth, then strain. Repeat with the pineapple, keeping them separate.
Add 1/4 cup sugar to each puree, the juice of 1 lime to each, and ½ cup cream to each. Whisk until sugar dissolves.
1/2 Cup sugar, divided
2 limes, juiced
1 Cup heavy cream
In a popsicle mold, fill each 1/4 of the way with pineapple, 1/2 with watermelon, then an additional 1/4 with pineapple.
Place the molds in the freezer for 1 hour until partially frozen. Insert popsicle stick and place back in the freezer overnight until frozen solid.
For serving, run hot water around the outside of the popsicle mold and slowly remove the pop. Enjoy!
