Make the Sriracha mayo. In a small bowl, add the mayonnaise and Sriracha, mix well to combine, and set aside.
3 Tablespoon Mayonnaise
1 Tablespoon Sriracha
In a large bowl, add the turkey, panko, cilantro, garlic, scallions, soy sauce, sesame oil, ginger, and red pepper flakes. Using your hands, mix all the ingredients together until fully incorporated.
1 1/2 Pound ground turkey, 85% lean
1/2 Cup panko breadcrumbs
1/4 Cup finely chopped cilantro
3 cloves garlic, minced
2 scallions, finely chopped
3 Tablespoon soy sauce
1 Tablespoon sesame oil
1 Tablespoon grated ginger
1 Teaspoon red pepper flakes
Form 1/3 lb of the mixture into a patty. Repeat with the remaining meat mixture until all of it is used.
Insert the probe horizontally into the center of a burger patty. Place the burgers directly on the grill grates. Close the lid and cook for 5-7 minutes per side, until well browned and the internal temperature reaches 165°F.

Remove the burgers from the grill. Place the burgers on a piece of lettuce, spread with spicy mayo, and top with sliced tomato, and red onion. Wrap the burger in additional lettuce. Enjoy!
