Try a new take on your favorite summer fruit. Watermelon is grilled over high heat then tossed with feta cheese, english cucumbers, red onion and a lime juice dressing.

|1 Small||watermelon, sliced|
|2 Tablespoon||Olive oil|
|2 Large||English cucumbers, cut into 1 inch cubes|
|1/2 Medium||red onion, thinly sliced|
|8 Ounce||feta cheese, cubed|
|1 Cup||pea shoots|
|2 Whole||limes, juiced|
|1 Teaspoon||fish sauce|
|To Taste||kosher salt and black pepper|
|1/4 Cup||Olive oil|
When ready to cook, set Traeger temperature to 500° and preheat, lid closed for 15 minutes.
500 ˚F / 260 ˚C
Drizzle watermelon slices with olive oil and season with salt.
1 Small watermelon, sliced

As Needed Salt
Place directly on the grill grate and cook 10 minutes, or until grill marks develop. Remove from grill and place in the refrigerator to cool.

For the Dressing: In a small bowl, whisk together lime juice, fish sauce, salt and pepper to taste. While whisking, slowly drizzle in olive oil.
2 Whole limes, juiced
1 Teaspoon fish sauce
To Taste kosher salt and black pepper
1/4 Cup Olive oil
Once watermelon is cool, remove the rind and cut into 1 inch cubes.
In a medium bowl, combine watermelon, cucumbers, red onion, feta and pea shoots. Pour on dressing and toss to coat.
2 Large English cucumbers, cut into 1 inch cubes
1/2 Medium red onion, thinly sliced
8 Ounce feta cheese, cubed
1 Cup pea shoots
Adjust seasoning with additional salt and lime juice, and serve. Enjoy!
