Try a new take on your favorite summer fruit. Watermelon is grilled over high heat then tossed with feta cheese, english cucumbers, red onion and a lime juice dressing.

1 Small watermelon, sliced
2 Tablespoon Olive oil
As Needed Salt
2 Large English cucumbers, cut into 1 inch cubes
1/2 Medium red onion, thinly sliced
8 Ounce feta cheese, cubed
1 Cup pea shoots
Dressing
2 Whole limes, juiced
1 Teaspoon fish sauce
To Taste kosher salt and black pepper
1/4 Cup Olive oil

    When ready to cook, set Traeger temperature to 500° and preheat, lid closed for 15 minutes.

    500 ˚F / 260 ˚C

    Drizzle watermelon slices with olive oil and season with salt.

    Ingredients
    • 1 Small watermelon, sliced

    • 2 Tablespoon Olive oil

    • As Needed Salt

    Place directly on the grill grate and cook 10 minutes, or until grill marks develop. Remove from grill and place in the refrigerator to cool.

    For the Dressing: In a small bowl, whisk together lime juice, fish sauce, salt and pepper to taste. While whisking, slowly drizzle in olive oil.

    Ingredients
    • 2 Whole limes, juiced

    • 1 Teaspoon fish sauce

    • To Taste kosher salt and black pepper

    • 1/4 Cup Olive oil

    Once watermelon is cool, remove the rind and cut into 1 inch cubes.

    In a medium bowl, combine watermelon, cucumbers, red onion, feta and pea shoots. Pour on dressing and toss to coat.

    • 2 Large English cucumbers, cut into 1 inch cubes

    • 1/2 Medium red onion, thinly sliced

    • 8 Ounce feta cheese, cubed

    • 1 Cup pea shoots

    Adjust seasoning with additional salt and lime juice, and serve. Enjoy!
