Burnt end lovers—it’s time to ham it up. Smoked with Traeger Coffee Rub and braised in a bold, sweet & spicy glaze, these ham burnt ends pack crispy edges, a tender center, and wood-fired flavor in every bite.

Ingredients

Ham Burnt Ends
  • 1 (7- to 8-lb) bone-in pre-cooked ham, cut into 1 1/2-inch cubes
  • 3 TablespoonYellow mustard
  • 4 OunceTraeger Coffee Rub (about 1/2 cup), divided, plus more as needed
For Spritzing
  • Apple juice, as needed
Braising Sauce
  • 1 sauce packet from the ham
  • 2 Cupchicken stock
  • 1 BottleTexas Spicy BBQ Sauce
  • 4 Tablespoonunsalted butter
  • 2 TablespoonCoffee Rub

Before You Get Started

This recipe calls for a pre-cooked bone-in ham — the kind that comes with a glaze or sauce packet. Save that packet; it becomes the base of the braising sauce and adds incredible depth of flavor. Cut the ham into uniform 1 1/2-inch cubes so they cook evenly and develop maximum bark. 


Steps

  • Step 1

    Preheat the grill to 250°F with the lid closed for 15 minutes.

  • Step 2

    In a large bowl, toss the ham cubes with the yellow mustard until evenly coated. Season liberally all over with the Coffee Rub. Transfer to sheet tray lined with a wire rack leaving space in-between each piece.

    • 1  (7- to 8-lb) bone-in pre-cooked ham, cut into 1 1/2-inch cubes

    • 3 Tablespoon Yellow mustard

    • 4 Ounce Traeger Coffee Rub (about 1/2 cup), divided, plus more as needed

  • Step 3

    Place the ham directly on the grill grates. Smoke, spritzing with apple juice every 45 minutes, until the cubes are deeply browned with a mahogany bark, about 1 1/2 hours.

  • Step 4

    While the ham smokes, make the braising sauce: In a medium saucepan over medium heat, combine the ham sauce packet, chicken stock, Texas Spicy BBQ Sauce, butter, and Coffee Rub. Bring to a simmer, stirring until the butter has melted and the sauce is smooth. Remove from the heat.

  • Step 5

    Transfer the smoked ham cubes to a large disposable aluminum pan or baking dish. Pour the braising sauce over the top and toss until every piece is well coated. 

  • Step 6

    Return the pan to the grill. Cook, uncovered, until the sauce has thickened and is bubbling around the edges, about 45 minutes to 1 hour more, tossing the burnt ends once halfway through.

  • Step 7

    Transfer the ham burnt ends to a serving dish. Spoon any remaining sauce over the top. Serve immediately. 

    Pro Tip

    Hardwood: Apple pellets pair beautifully with the sweetness of ham and enhance the caramelized crust. 

    Make-Ahead: These reheat exceptionally well. Store leftovers in an airtight container in the refrigerator for up to 4 days and reheat in a 300°F oven or on the grill, covered with foil, until warmed through.
