Cool off with this refreshing Traeger take on a classic. Fresh-cut lemons are dipped in sugar and grilled to caramelized perfection, before getting squeezed into a smoked simple syrup and ice cold water mix.

16 lemons, halved
1/2 Cup turbinado sugar
3 Cup smoked simple syrup (homemade or store-bought)
1 Cup vodka, optional
lemon slices, for garnish
As Needed fresh mint, for garnish

Steps

    When ready to cook, set Traeger temperature to 500°F and preheat, lid closed for 15 minutes.

    Dip lemons cut side down, into the turbinado sugar. Place lemons cut side down directly on the grill grate and grill 5 to 10 minutes or until grill marks develop and sugar is caramelized. Remove from grill and set aside to cool.

    Once the lemons are cool enough to handle, squeeze juice from lemon halves into a medium bowl. Run the lemon juice through a strainer and into a large pitcher.

    Add in simple syrup, vodka (if using), and 3 cups water. Stir to combine. Taste and adjust with more lemon juice, sugar or water until lemonade reaches desired balance.

    Add ice and serve. Garnish with lemon slices and mint if desired. Enjoy!
