- 2 Pound
- boneless, skinless pork shoulder, cut into 1" cubes
- 1 1/2 Pound
- lard
- 1 Tablespoon
- juniper berries
- 2 Clove
- garlic
- 4
- bay leaves
- To Taste
- kosher salt

- Cold Smoked Cheese
- Smoked Pickles

Step 1
To make the Pulled Pork Rillette: When ready to cook, set the Traeger to 275℉ and preheat, lid closed for 15 minutes.

Step 2
Place the pork in a Dutch oven or cast iron pan large enough to hold both the pork and lard. Heat the lard until melted and pour over pork.

2 Pound boneless, skinless pork shoulder, cut into 1" cubes
1 1/2 Pound lard
Step 3
Add remaining ingredients, cover with foil and place in the grill. Cook for 2-1/2 to 3 hours or until tender.

2 Clove garlic
4 bay leaves

Step 4
Remove bay leaves, garlic cloves, and juniper berries. Strain out pork and reserve lard.
Step 5
Transfer pork to a medium bowl and mash with a fork. Add half of the lard and stir to combine.
Step 6
Place pork in small mason jars and push down with a spoon to remove any air bubbles.
Step 7
Heat the remaining fat until liquefied and pour 1/4” of fat on top of the pork.
Step 8
Serve with Smoked Homemade Crackers, Cold Smoked Cheese, Smoked Pickles, and Smoked Olives. Enjoy!
