This wood-fired, bacon-studded take on German potato salad skips boiling the spuds. Instead, the potatoes cook in a zesty apple cider vinegar mixture right on the Traeger. The vinegar not only lends flavor but it also prevents the potatoes from becoming mushy during the cooking process. Soaking the potatoes in water removes excess starch and keeps them from browning.

Inspired by carnitas, in which pork is cooked low and slow then crisped over high heat, this take uses beef flavored with Traeger Coffee rub that’s smoked for hours then braised until fall apart tender. Note: You’ll need to cook the meat for about 8 hours, so plan ahead. After getting shredded, the beef gets quickly seared on the flat top until crisp on the edges for an amazing contrast of textures. Serve the beef as main dish with sides like French fries, rice, cooked greens, or coleslaw or use the tender meat, topped with cheese if you like, in sandwiches, wraps, or tacos and serve the braising liquid on the side for dunking.

Our famously easy 3-2-1 ribs recipe will make your rib game the envy of the neighborhood. This super simple recipe takes all the confusion out of making ribs without sacrificing any flavor. Start by smoking your ribs for 3 hours, then cook inside foil for 2 hours and finish by removing from foil and brushing on sauce for up to 1 hour.

We’re taking the classic smashed burger up a notch with porcini powder and a special sauce. The dried mushroom powder, sometimes called dust, gives the meat an even deeper savory flavor. If your supermarket carries dried porcinis but not powder, simply grind the whole dried mushrooms in a spice grinder.
